• Lemon rice

    Be it be picnic or a long train journey from upnorth to Kerala during our school summer vacations, mom used to pack Lemon rice for lunch. So you can imagine the memories I attach to this simple, plain yet delicious lemon rice dish. I am sure you will like it…and yeh this is a heirloom recipe :D

    Rice – 1 cup
    Water – 2 cups
    Oil – 1 tsp

    1.    Add all three together and let it cook on high flame
    2.    Once the water boils, simmer the gas and cover vessel
    3.    Cook till water evaporates / rice is cooked

    Coriander leaves – for garnish (finely chopped)
    Lemon juice – 2-3 (according to the sourness you need)

    For tempering
    Oil – 1 tsp
    Mustard seeds – 2 tsp
    Urad daal (white lentils) – 1 tsp
    Red chilli – 2 Nos
    Green Chilli – 2 nos (finely chopped)
    Cashew – 4-5 broken in small pieces (optional)
    Curry leaves – 1 sprig
    Turmeric powder – 1 pinch

    1.    Heat oil in a pan and add mustard seeds
    2.    Let it splutter
    3.    Now add Urad dal, red chilli, green chilli,cashew,curry leaves and turmeric mix well. Do no let it burn
    4.    Add to cooked rice and mix lightly
    5.    Add salt and lemon juice and stir
    6.    Garnish with coriander leaves
