So I keep trying out various recipes when it comes to chicken…check this recipe out! But don’t forget to leave me your feedback..!

Boneless and skinless chicken breast – 4 breast halves
Eggs yolk – 2 Nos
Lemon juice – of 2 Nos (big sized)
¾ cup cornflour
1 cup chicken broth
Pepper powder – ½ tsp
½ cup water
3 Tbsp brown sugar
Ginger – 1 tbsp (finely chopped)
Oil for frying
Salt to taste
Spring onions – 2-3 Nos. (finely chopped)

Combine ½ cup cornflour, ¼ portion of water, salt and egg yolks and whisk until smooth

Coat the chicken pieces evenly with the above mixture

Heat oil in a wok and fry the chicken pieces until brown and tender

Remove to absorbent paper and rid all excess oil

Cut cooked chicken into cubes

Take in a pan remaining cornflour, brown sugar and ginger

Add to it broth and remaining water

Cook on medium flame stirring frequently

Cook till the sauce come to a boil and thickens

*Remove from the heat and add lemon juice and stir. Your sauce is ready

Placed the chicken pieces in a serving dish

Pour the sauce over the chicken pieces covering each of the piece nicely

Garnish with spring onions (scallions)

Serve hot with fried rice or noodles

* Lemon juice should be added in the end post all cooking else the gravy might get bitter. Hence its better to put it after removing the cooked sauce off the burner….this is based purely on my personal experience.

This one was different from the crepe I normally was used to. This one was salty and filled with all stuff you love. And this one also had a special name that is Galette

Galette was my first brush with French cuisine as Paris was our landing port.Jessica and Sebastian our friends Palaiseau (a quaint suburb 40 minutes away from Paris)made for me and Q mouth watering Galettes!

Galette is the original term for Crepes except for the fact that Galette is the salty version while Crepe is sweet. From the look of it I thought I will be able to take in atleast two of the galettes till I had one! Its quite filling and a full meal in itself. Check it out!

All Purpose Flour – 2 cups

Buckwheat flour / wheat flour – 2 cups

Eggs – 4 nos

Mix all the above and make a soft dough

Start adding milk (1-2 cups) and continuously whisk the dough avoiding lumps. The idea is to get a running batter stage

While whisking the batter add melted butter (1-2 cups) and keep whisking till you get a smooth running batter (almost like Indian dosa batter) devoid of any lumps

Heat a pan and add a dash of butter. Pour out a ladle of batter on the pan. Lift the pan and tilt it sideways to make a batter run and make a neat circle

After 2 minutes flip and cook the other side.

Add fillings of your choice and close to make it look like a semi circle

Serve hot!

Options for filling: Beaten egg with herbs and / or cooked vegetable and/ or cooked meat

Till next time…happy cooking!

Meet Jessica and Sebastian…. currently pursuing PhD studies! All the best for your future guys!

Onion – 1 No sliced
Mushrooms – 5-6 Nos cut length wise
Capsicum (bell pepper) – 1 no diced
Baby corn – 4-5 Nos halved lengthwise
Cornflour – 1 tsp dissolved in 1.5 tsp of water

Boil noodles in boiling salted water till tender. You can add oil so that the noodle doesn’t stick to each other. Drain and keep aside.

Blanch broccoli florets in boiling salted water for about 2-3 minutes then drain.

Heat oil in a wok and add garlic, ginger, chicken and onion and stir fry for 2 minutes until the chicken strips are sealed and onions are tender.

Now add broccoli, mushrooms and capsicum and stir fry for another 2 minutes

Mix cornflour paste with red wine, and soy sauce and tip it into the wok

Add drained noodles and sesame oil.

Add seasoning and stir thoroughly

Sprinkle over sesame seeds and serve hot this gorgeous looking Chicken / Vegetable chowmein

Tip: to make it look more colorful, use a red capsicum (bell pepper). Red along with green broccoli and cream babycorn looks stunning!

Well, the original recipe that I found was made with pork as the main ingredient. Since I am more of a chicken fan, I decided to substitute pork with chicken and result was simply lovely. The mantra is use the meat you love the most ..So here’s the Sweet & Sour Chicken recipe just for you!

Boneless chicken – 250 gms
Brandy or whisky – 2 tsp
Egg – 1 No., beaten
All purpose (Refined) flour – 3 tbsp
Oil for frying
Salt and pepper for seasoning
Spring onion – green part – finely chopped

For Sauce you need

Small onion – 1 no. (diced)
Small carrot – 1 No. (diced)
Small green capsicum (bell pepper) – ½ , cored, seeded and diced
Soy sauce – 1 tbsp
Sugar – 3 tbsp
Tomato puree – 1 tbsp
Stock or plain water – 3-4 tbsp
Cornflour – 1 tbsp dissolved in 1.5 tbsp of water

Cut chicken into cubes and place it in a dish with salt, pepper and brandy. Let it marinate for 20 minutes.

Beat egg in a bowl and tip in the marinated chicken cubes and coat well

Sprinkle refined flour over the chicken cubes until they well coated

Deep fry the chicken cubes in about 3-4 batches for about 2-3 minutes stirring gently to separate the pieces.

Remove with a slotted spoon on absorbent paper to drain the excess oil

Reheat the oil unil hot and return the chicken to the wok for another minute until they are golden brown. Transfer the meat from the wok to absorbent towel using a slotted spoon.

For the sauce, heat oil in a wok and add all vegetables. Stir fry for about a minute or so.

Add seasonings and tomato puree with stock or water.

Add cornflour paste after a minute and bring it to boil and then let it thicken.

Add the chicken and blend well so that each piece is well coated with the sauce.

Garnish with spring onion.

Serve sweet & sour chicken hot with rice or noodles.

Liked it? Please do let me know…!

Till next time……happy cooking!
