Methi or Fenugreek has a distinct flavour, whether in dried form(kasoori methi), fresh leafy form or seed form. Packed with medicinal properties, methi is used very commonly in India. Methi dal, methi paratha, methi malai matar, methi pakoda; there are very many Indian dishes that uses methi as one of it’s ingredients. My all time favorite methi dish has to be Aloo Methi (potato cooked with fresh fenugreek leaves)

I recently borrowed a great cookery book from a friend and as I was glancing through I had the urge to try out something new. Well, I have made pies before but they have been open ones. This one looked different and was also cooked differently than my normal style, so I zeroed on this one. But I decided to go with different ingredients essentially what I had readily available in my refrigerator! Taste wise came out well 🙂 texture wise could have been better!! Well I will tell you the mistake I made as I go along!

Chicken Coconut Curry

I shared with you earlier recipe for chicken curry sans any coconut…this one is with coconut milk…check it out!

Chicken – 500 gms (washed, drained and cut into pieces)
Onions – 2 nos (sliced)
Potatoes – 2 nos (sliced)
Green chilies – 6 nos (slit length wise)
Curry leaves – 2 sprigs
Coriander leaves – 2 tbsp (finely chopped)
Coconut Milk – 2 cups
Ghee (clarified butter) – 7 tbsp
Salt to taste

Kerala Chicken Curry

Well, necessarily not all Kerala recipes need to include coconut as one of the ingredients. This chicken curry is sans any coconut…a must try!

Chicken – 500 gms (washed, drained and cut into pieces)
Onions – 2 nos (big sized, finely chopped)
Ginger – 1 tbsp (julienned)
Tomatoes – 4 nos (finely chopped)
Curry leaves – 1 sprig
Cooking oil – 4 tbsp
