This recipe is great! I love the idea of coconut and veggies in one dish – I’m a sucker for anything coconut actually. This dish is actually very similar to one of my favorite dishes that I make all the time – Kerala Vegetables from Tasty Bite. I usually don’t have time to cook, so I buy these ready-made meals from them and they always hit the spot. I definitely recommend the brand if you don’t have time to make this dish, but if you do, it’s great! I’ve definitely been inspired and will be making this tonight for dinner! Thanks for the great recipe and bon appetit! I’ll let you know how it turns out.
